Sardines, a super food rich in Omega-3 fatty acids, B vitamins, protein and major minerals such as phosphorus, calcium and potassium and traces of iron and vitamin D. According to science Omega-3 fatty acids, are known to lower "bad" (low-density lipoproteins) cholesterol and increase "good" (high-density lipoproteins) cholesterol which may reduce the occurrence of cardiovascular disease. Regular consumption of omega-3 fatty acids may also reduce the likelihood of developing Alzheimer’s disease. These fatty acids can also lower blood sugar levels. As a child I ate sardines daily and eating these Crown Prince, sardines brings back sweet memories of childhood that I am now passing on to my own young children. Unlike Brisling sardines, (which I also enjoy), these sardines are larger, more meaty with a bolder smoky flavor, and just as delicious. They are also boneless and skinless, which are much easier when introducing to children. My family and I enjoy them straight out of the can daily as a snack, or served on crackers or toast or mixed in salads. Here’s one of my recipes to get you started:Mediterranean Sardine SaladIngredients:Lettuce and Arugula mix salad greensPitted Black Olives roughly chopped1 tbsp Capers½ cup finely chopped red onions2 tbsp olive oil1 tbsp red wine vinegar or apple cider vinegar2 cans Sardines (drained) and broken into piecesSaltFreshly ground black pepperPreparation1.
